In El Arenal — at the foot of the Tequila Volcano, in the heart of the Los Valles region — our work follows a single conviction: that great tequila cannot be hurried. It is measured in seasons, not schedules.

Every piña we cook began as a seedling planted years before, tended through drought and harvest by hands that have read this red volcanic soil for generations. What leaves our distillery is not merely a product — it carries a producer's signature that every bottle in the world is legally bound to declare: NOM 1524.

From field to barrel

Six honest steps.
No shortcuts in any of them.

    La Jima

    Skilled jimadores cut each mature agave by hand with the coa, stripping the leaves to reveal the sugar-rich heart — the piña.

  2. 02

    Cooking

    The piñas are steam-cooked in autoclaves, converting the agave's inulin into the clean, fermentable sugars that define our house character.

  3. 03

    Extraction

    Cooked hearts are milled and pressed to release the sweet mosto — the living juice that will become tequila.

  4. 04

    Fermentation

    In stainless-steel tanks, yeast patiently transforms sugar into alcohol, drawing out the aromatic soul of the agave over days, not hours.

  5. 05

    Distillation

    Double-distilled for clarity and depth. The first pass yields the ordinario; the second refines it to a bright, expressive spirit.

  6. 06

    Maturation

    For our rested expressions, oak does the rest — time in barrel rounding the spirit into reposado, añejo, and beyond.
